Just like Grandma's -PB cookie recipe

They're back, by popular demand! (That and I had no idea how to follow up a first blog post).

I gave you the idea -super easy gluten free cookies but I didn't include the recipe (my bad!).
So here it is:

A side note: I looked up other peanut butter cookie recipes before I made these tried and true ones but they all had a ridiculous amount of butter and sugar in them and if you're anything like today's health-conscious society, that just doesn't fly. But I digress. The recipe:

Peanut Butter Cookies
(Gluten Free)

Ingredients
3/4 cup Kraft peanut butter*
1/2 cup butter
1 1/4 cup firmly packed brown sugar
1 egg
3 tbsp milk
1 tbsp vanilla
3/4 tsp baking soda
1/4 tsp salt

Method
1. Preheat oven to 375F.
2. Cream peanut butter, butter and brown sugar in a large bowl at medium speed of electric mixer.
3. Add egg, milk and vanilla and beat until smooth and creamy about 2 minutes.
4. Combine flour, baking soda and salt. Add to creamed mixture gradually, stirring until thoroughly blended.
5. Roll into walnut sized balls and place 12 to a tray. With a fork dipped in hot water between uses, firmly press down on the centre of the cookies to create the grid pattern.
6. Bake for 7-8 minutes or until just beginning to brown.
7. Enjoy!


Makes 3 dozen cookies.
*you can use natural peanut butter but they just don't taste quite the same.
